Caramelized Garden Tomatoes

If you’ve grown cherry tomatoes, you understand how you can suddenly have a glut (and if you haven’t grown them before, now’s the time to try!). What to do? Roast them. Cherry tomatoes are jam-packed with nutrients, and when roasted develop a deep, rich, and slightly sweet flavor reminiscent of Tuscany. Serve with Spaghetti Squash Noodles , or Lamb Meatballs with Minted Tahini Sauce and a Speedy Salad .

2 pints cherry tomatoes

1 to 2 tablespoons extra-virgin olive oil

½ teaspoon sea salt

1 . Preheat the oven to 400°F.

2 . Put the tomatoes in a large bowl, add the oil, and toss to coat.

3 . Place the tomatoes on a large baking sheet and sprinkle with salt. Bake for about 45 minutes, stirring halfway through, until the skins have shriveled or slightly split.

4 . Enjoy hot, at room temperature, or chilled.

POWER BOOST: Top with Green Herb Oil .
